Flights of Tequila

Flights are 1oz pour in champagne glass as a tasting. It is the best way for guest to try the different varieties of tequila. The flights consist of the Silver(blanco), reposado, and Anejo. They are called vertical flights because you start at the bottom to the top. The difference between them is in how they are fermented and aged.

Silver

It is not aged. Clear in color. Considered best for making mixed drinks.

Reposado

It is aged at least 2 months, sometimes longer in oak barrels which is why the color changes to soft golden color.

Anejo

Is aged for over one year or long. Done in small batches. It develops a more complex flavor and deep gold to dark brown color due to the aging. It is the sipping tequila.

Mezcal

Mezcal differs from tequila for few reasons. Tequila is only made from blue agave. Mezcal can be made from different types of agave. Its flavor profile differs because it is smokier than regular tequila. Mezcal is also distilled differently first cooked in earthen pits lined with lava rocks and charcoal then clay pots unlike tequila that is steamed in ovens then distilled copper pots or barrels. The taste differs like whiskey is to scotch. Mezcal is considered the “Scotch” of tequilas.
